Road Trips and Potato Chips

Order Blueberries …

Part of your favorite trail is closed. Or you miscommunicate and the meat you need to cook that evening is still frozen. Or it starts to rain right before you planned to be outside. Or your GPS keeps taking you to the wrong place. And we can’t forget – road construction.

BUT you are on vacation. The emails, the lawn, the house repairs, the doctor’s appointments are at home (or are supposed to be).

Once of the best parts of travel is the food, right? Here are some road-trip favorites you can find at The Country Cupboard:

Mess Free Tip:
Grab a box of snack size bags and let the kids portion out their snacks before you leave. It definitely helps with the mess and certainly keeps them from eating the whole bag.

Tex-Mex Popcorn

Total Time: 15 min | Makes 16 cups

For the road, movie night or a last-minute guest snack. This has great flavor. YUM!

  • 1/2 cup popcorn kernels*
  • 3 tablespoons oil (I like coconut oil)*
  • 1/2 teaspoon cumin seeds **
  • Refrigerated butter-flavored spray
  • 1/4 cup minced fresh cilantro
  • 1 teaspoon salt*
  • 1 teaspoon chili powder*
  • 1/2 teaspoon garlic powder*
  • 1/8 teaspoon smoked paprika*

  1. 1. In a Dutch oven or large pot, over medium heat, cook the a few popcorn kernels, oil and cumin seeds until oil begins to sizzle and the kernels pop.
  2. Add the rest of the kernels and shake for 30 seconds. Put on lid, but leave it vented. Remove from heat when popping almost stops.
  3. 2. Transfer to a large bowl; spritz with butter-flavored spray. Add remaining ingredients and toss to coat. Continue spritzing and tossing until popcorn is coated.

**If you can’t find cumin seeds, add 1/4 t. cumin powder when adding other seasonings.
