Today we’re talking about friends. Not food, but real people. I have some amazing people in my life, and not just because we bond over food. Although, that’s some of it. Who couldn’t resist someone who makes breakfast for them and serves coffee and Chocolate Chip Scones? (See recipe below.)
Another friend of mine happens to be my co-worker, Christine. We sure talk a lot. Food is part of the discussions. That comes with the job! She shares her favorites below!
Christine’s favorites – Deluxe Mixed Nuts: My favorite healthy snack with just the right amount of salt and crunch.
Dark Chocolate Cranberries: Chewy dried cranberries with a thick layer of chocolate cover them. Yum!
Tinkyada Noodles: Brown rice pasta that doesn’t fall apart and taste great!
Chia Seeds: They make a yummy breakfast or add them to any kind of energy bite.

Paleo Chocolate Chip Sweet Potato Scones

time 30 min | serves 8
These things are incredible! Especially if your friend serves them to you. Fabulous for breakfast with coffee. They do tend to be moist and a little crumbly. Check out the more traditional recipe here.
  • 1 cup + 2 tablespoons almond flour*
  • 1/4 cup coconut flour*
  • 1 scoop of Trim Healthy Mama Collagen*
  • 1/2 teaspoon baking powder*
  • 1 teaspoon cinnamon*
  • 1/2 cup sweet potato puree (pumpkin could work too)
  • 1/4 cup almond milk
  • 2 tablespoons coconut oil*
  • 1/2 teaspoon vanilla extract*
  • 1 egg*
  • 1/4 cup dark chocolate chips*

  1. Preheat oven to 350 degrees and line a baking tray or large dish with parchment paper
  2. In a large bowl combine dry ingredients and mix well
  3. In a small bowl whisk together wet ingredients until combined
  4. Fold wet ingredients into dry then fold in dark chocolate chips
  5. Place dough onto pan and form a big disk then cut in 8 pieces
  6. Bake in oven for 25 minutes and enjoy!
*These will be more moist than most scones because of the sweet potato, if you prefer drier scones then add more almond flour or less puree. Will stay good in fridge for a week
