We were made to rest. We cannot be amazing people 24/7 every day of the year. Winter may not be your favorite season, but it was created for us to rest.
So whether your “winter” looks like a cozy evening eating Popcorn and Cheese Curds/Cubes or a 10 minute “recharge” break in the middle of the day with a cup of Coffee or Cappuccino or Chai, embrace this season of winter/rest.

Hot Cocoa Popcorn (with Sugar-Free option)

15 minutes | 8 servings
So many of you love popcorn during these winter evenings. Here’s two comfort foods combined together. Better double the recipe since popcorn disappears very quickly.
  • 1/2 cup popcorn kernels*
  • 4 tablespoons coconut oil, divided*
  • 2 tablespoons cocoa powder*
  • 2 tablespoons sugar or 1 pinch of stevia*
  • 3/4 teaspoon salt*
*Ingredient available at The Country Cupboard
  1. Place 2 T. coconut oil in a large pot and heat over medium heat. Add a few kernels to the pot.
  2. When the kernels pop, add rest of the popcorn. Shake pot for 10-20 seconds to coat kernels with coconut oil.
  3. Vent pot slightly to allow steam to escape. (This prevents tough popcorn.)
  4. Remove pot from stove when popping slows to 1-2 pops every 5 seconds.
  5. Place 2 T. coconut oil in a small, glass bowl. Heat until melted. Add cocoa powder, sugar and salt to the coconut oil. Stir with a fork.
  6. Pour over the popped popcorn. Stir to coat.
