With Christmas behind us, our minds turn from gifts to snacks (for New Year’s).

Corned Beef and Swiss Dip

Great for New Year’s Day! This can always be cooked in a crockpot on low for 3 hours.
  • 1 tablespoon oil
  • 3/4 onion, chopped
  • 3/4 pound deli-sliced corned beef, diced*
  • 2 (8 ounce) packages cream cheese, softened
  • 1 1/2 cups mayonnaise*
  • 1 cup sour cream
  • 1 cup shredded Swiss cheese*
  • 1 teaspoon garlic powder*
  • For dipping: unsliced Italian bread & crackers*

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat oil in a skillet over medium heat. Cook and stir onion until tender, 5 to 7 minutes.
  3. Transfer onion to a large mixing bowl.
  4. Stir corned beef, cream cheese, mayonnaise, sour cream, Swiss cheese, and garlic powder into onion. Mix until thoroughly combined.
  5. Spoon the corned beef mixture into 9 x 13 baking dish.
  6. Bake in preheated oven until the dip is fully cooked and bubbling, 1 to 1 1/2 hours.
  7. Serve with bread and crackers.
