Breakfast Chia Seed Pudding – Loaded with Fiber

5-10 minutes | 1 Serving
I could eat this every single day for breakfast – all year long.
1/4 c. chia seeds*
1-2 T. pumpkin seeds or other seeds*
1 T. ground flax meal*
1 t. local raw honey OR 1-2 T. raisins*
1/2 T. cinnamon*
pinch of salt*
pinch of cayenne pepper*
1 T. coconut oil*
1/2 c. unsweetened non dairy milk*
*Ingredient available at The Country Cupboard
Stir together first 7 ingredients. Mix/mash in coconut oil. Add milk. Mix again. Let set a few minutes for chia seeds to absorb liquid.
**Becky likes hers warm and places it in the toaster oven for 5-10 minutes until the coconut oil is melted. Do NOT use microwave. All the good nutrition will be zapped away.
***It is possible to make it the night before. I like to stir together all the dry ingredients for several breakfasts. Then in the morning I add the milk.
