Salted Caramel Snack Balls

15 minutes | 20 balls
Simply amazing, simply easy! Not only perfect for fall, but this is our current favorite snack!
2 cups nuts or seeds (I use raw sunflower seeds or walnuts)*
1 1/2 teaspoons salt (I like Real Salt)*
2 cups dates*
*Ingredient available at The Country Cupboard
Add nuts and salt to blender. (A high powered blender like a Vitamix works the best.) Grind until powdery. Add dates, 1 cup at a time until chopped. Blend on high until no more little pieces and it’s pretty well mixed.
Dump out on a cookie sheet. It might be hot! Roll into 1 inch balls and freeze until set. Store in refrigerator for 1 week or in the freezer for 1 month.
**You can also press into an 8 x 8 glass pan and cut into bars.
