Last week I promised info about the Keto Diet. What it is, how it works, the benefits, downsides and some final thoughts.
The diet is heavily weighted in fats; meals are based on meat, eggs, cheese, high-fat dairy, poultry, seafood, and plant-based fats like oil, nuts, seeds, and avocados. What are missing are most fruits, starchy vegetables, whole grains, legumes, refined grains, sugar, and dairy.
How it works: the surface it’s another elimination diet; essentially a lower-carb version of a low-carb diet. The diet, when done rigorously and accurately, sends your body into a state of metabolic starvation. In the absence of available glucose, our bodies start breaking down fat for energy, into ketone bodies (a process called ketosis), to generate energy until carbohydrates are once again made available (if at all).
Benefits: weight loss, less cravings, better mental focus, more energy, better blood sugar control, higher immunity
Downsides: very extreme, very restrictive, and difficult to do correctly and safely maintain. At the beginning there can be “healing crisis” symptoms such as headaches, dizziness, constipation, muscle cramping, bad breath, and loss of energy.
The studies suggest that there are definite short-term benefits of a high-fat ketogenic diet. However, the long-term studies, which are just beginning to be published, are suggesting that this is a short-term strategy at best, and the risks and reversal of benefits start to surface after eating ketogenically for an extended period of time.

Dairy Free Cauliflower Keto Pizza Crust
Ready in 50 minutes
Missing pizza? Here’s a keto friendly crust which is great for anyone looking to reduce carbs.
2 cups riced cauliflower (purchase already riced or rice it yourself by chopping it super fine)
2 large eggs*
3 tablespoons coconut flour*
2 tablespoons avocado oil*
1 teaspoon fine salt*
1 teaspoon dried Italian herbs*
Toppings such as pepperoni, onions, olives, turkey sausage, bell peppers, cheese
1. Preheat oven to 405F.
2. Cook riced cauliflower until crisp-tender. Then transfer to nut milk bag or clean kitchen towel. Carefully squeeze out as much water as you can. Let it rest a few minutes then squeeze out even more water.
3. You should have about a cup of this cauliflower paste. Add that to a large bowl and mix in the rest of the ingredients until a soft dough forms.
4. Line a sheet pan with parchment paper and shape your pizza crust on it. Do not spread it thinner than ¼ inch or it will tear.
5. Roast for 25-30 minutes until the cauliflower crust is golden in color and lightly browned on the edges.
6. Add your favorite toppings and pop it in the oven for an extra 5 minutes.
