Did you know our brain is made up of mostly fat? And it takes eating good fats to keep it healthy. So we need fat in our diets to keep our brains healthy, but also to lower our cholesterol, to maintain healthy weight, to satisfy our appetite and to strengthen our immunity.

 

So which fats are the best? I did a little research and here’s what I came up with:

Amazing Dairy Free Cheese Sauce (aka Carrot Cheese Sauce)

4-6 serving
Ready in 30 minutes
Those with a dairy free diet LOVE this cheese. It works for mac ‘n cheese, grilled cheese, in casseroles, and for nachos ‘n cheese.
1 1/4 c. water
1/4 c. olive or grapeseed oil
1 t. lemon juice
3/4 c. chopped cooked carrots (or more)
1/4 c. nutritional yeast
1/4 c. cornstarch or arrowroot powder
3 t. onion powder
1 1/2 t. salt
1 c. unsweetened dairy free milk
Thin cheese sauce:  Cut and cook carrots in a medium saucepan. Add all ingredients to Vitamix or high speed blender. Blend on high until mixed. Then pour into saucepan. Cook on medium, bringing to a boil, stirring constantly. Once thick, remove from heat. Sauce thickens as it cools.
Thick cheese sauce: Only use 1/2 c. water and 1/2 c. milk. You can adjust the liquids and cornstarch/arrowroot powder as you’d like to get a thicker or thinner sauce.
This sauce keeps well in the refrigerator for 3-4 days. Do not freeze.
