This is being written in a remote location, or rather, written remotely. Actually, it’s about the opposite of remote as you can get. Because of temporarily living in an urban location, I’ve enjoyed many different kinds of ethnic foods in the last few weeks. With that in mind, I’m sharing the recipe below for Asian Chicken Salad. It might be a bit out of your comfort zone, but go ahead and try it. You can’t love it if you don’t try it.

Speaking of trying it, have you used our Squeezable Pie Fillings yet? Asian Chicken Salad

Serves 4    Ready in 30 minutes
Here’s a great salad variation. The ginger and sesame go so well together.
6 cups baby spinach leaves, washed, and dried
1 large carrot, shredded
1 red bell pepper, thinly sliced
1/4 of a whole red onion, thinly sliced
Bragg’s Asian Sesame Ginger Dressing, to taste*
1 tablespoon sesame seeds toasted*
2 cups shredded rotisserie chicken or grilled chicken, sliced (for an easy option, order 1/2 lb. Oven Roasted Chicken in the deli sliced really thick and cut it into cubes)
* Ingredients available at The Country Cupboard
  1. Combine all salad ingredients in a large bowl, except for 1 tablespoon of sesame seeds and chicken. Add the salad dressing to the salad and toss
  2. Serve the salad in the individual serving bowls and top with the sesame seeds and sliced chicken.
