Is anyone else waiting for “rainbows”? Most of us when we hear the word “rainbow” think of that beautiful display God put in the sky when the sun and the rain collide.
Spring brings rainbows. It’s not quite spring outside yet, but there are rainbows here. New rainbows!

Flourless Peanut Butter Waffles
Makes 2 servings Ready in 30 minutes
Need more protein for breakfast and love waffles? Try these. Mix in chocolate, cinnamon or peanut butter chips for a little extra punch.
1 c gluten free rolled oats* or 1 c. oat flour
1/4c unsweetened apple sauce
3 tbsp to 1/4 c peanut butter*
1 tsp vanilla*
1/2 tbsp apple cider vinegar*
1 tsp baking powder*
Pinch of salt*
Pinch of cinnamon*
1/2 c dairy or non dairy milk of choice*
Optional honey to sweeten*
Optional Toppings : peanut butter chips*, maple syrup*, berries, banana, or dark chocolate chips*

1. First place gluten free oats in blender or food processor. Blend until you get a flour or close to it.
2. Next add the rest of your ingredients. Blend until a thick batter is formed. You might need to stop a few times and scrape the sides. Stir in chips, if desired.
3. Once a batter is formed, let it sit in fridge for 20 minutes.
5. Pour half the batter (depending on your size waffle iron) and heat for about 5 minutes or until waffles are brown and fluffy.
6. Remove and repeat. This should make 2 6inch waffles (or 8 section of waffles).
7. Plate and top with fruit, and/or maple syrup.
NOTE: If you are not eating these right away, feel free to place in foil and freezer for later. Then pop in toaster oven before eating again. EASY!
If you want to double the batch start, simple make 2 batters in blender, then combine.
