We had Hungarian guests at our house this month for several days. I loved learning about other cultures and seeing the US from their eyes.

Their diet is much simpler than ours. It’s just Hungarian food. Not Mexican, Chinese, Thai, Italian and all the other ethic foods we eat (and we fed to them while they were visiting.) Therefore, their spices and pantries are much similar.

One thing they don’t (or didn’t) eat is sweet potatoes. That is, until a recent introduction to sweet potato fries. Now who can resist sweet potato fries? No wonder they fell in love. So we fed them more fries and Sweet Potato Brownies and Baked Sweet Potatoes (like the recipe below). They went home happy, looking for ways to buy sweet potatoes and make their own deliciousness in Hungary.

Now I don’t know if Sweet Potatoes are an official American food, but I do know this Honey Mustard Pretzel Lover’s Snack is. And it’s new here. Fill your sweet and salty cravings with this snack. And bonus – it even looks like some sunshine to brighten your winter day.

Stuffed Sweet Potatoes

Makes 4    55 minutes
Get ready for Valentine’s Day or a Super Bowl Snack

 

4 medium sweet potatoes, scrubbed
1 tablespoon coconut oil*
1 teaspoon coarse sea salt*
4 ounces bacon, chopped
2 boneless skinless chicken breasts, diced
2 cups packed baby spinach
1 cup bite-sized broccoli florets
½ cup shredded Brussels sprouts, trimmed and outer leaves discarded
¼ teaspoon black pepper*

  1. Preheat oven to 400° F. Rub the skins of the potatoes all over with coconut oil and pat them with salt. Prick them with a fork a few times and place on a rimmed baking sheet lined with parchment paper or foil. Bake until tender, about 40 minutes.
  2. Make the filling: Sauté the bacon in a large skillet set over medium-high heat for 5 minutes. Add the remaining ingredients and continue sautéing until the chicken is cooked through and the vegetables are softened, about 10 minutes. Spoon the filling with a slotted spoon into the cooked sweet potatoes and serve.
