Kids aren’t the only ones with imaginations. Right now I think being a bear might be a good idea. Hibernating in away from the cold and letting all that good holiday food settle in to keep me warm. Catching up on lost sleep might be not a bad idea either. Anyone want to be a bear with me??
Unfortunately, reality has set in. Being a bear isn’t an option. But acting like a bear might be. Staying in and cozy is an option. Sleeping extra is too. However, I’m not sure I want to carry around all that extra holiday weight until spring.
So let’s get started thinking about shedding some pounds. Getting rid of sugar and carbs is a good option. Hmmm, now what snack options do I have?

Grain-Free No-Bake Homemade Protein Bars
I love homemade protein bars. The taste (and ingredients) are so much better. Double the batch to save time on prep and dishes. You’ll be glad you did.
- 2 cups nuts or seeds* (Mixing several kinds is okay.)
- 1/2 cup flax meal*
- 1/2 cup shredded coconut, unsweetened*
- 1/2 cup seed or nut butter*
- 3/8 teaspoon salt*
- 1/2 cup coconut oil*
- 2 Tbsp liquid sweetener (honey or maple syrup) or 1/32 tsp of stevia extract*
- 2 teaspoons vanilla extract*
- Top with 1 cup of chocolate chips* – use Lily’s for sugar-free
* Ingredients available at The Country Cupboard
- Place nuts or seeds, flax meal, coconut, seed or nut butter and salt in the bowl of a food processor.
- Process until the nuts or seeds are ground into a coarse meal
- Melt coconut oil over low heat. If the temperature of your home is around 76 degrees, you can skip this step and add the oil directly to the food processor as it will be soft enough to process easily.
- Add coconut oil, sweeteners and vanilla to processor bowl and process until well combined to form a thick, yet crunchy paste.
- Press the mixture into an 8×8 square pan (you can be quite flexible here. A 9×9 will work just fine.)
- Place in refrigerator to chill.
- While bars are chilling, melt chocolate chips.
- Place back in refrigerator to chill.
- Cut into squares and serve.
- Store in refrigerator or freezer.
