Peppermint Brownie Snack Bites

Makes 10 little balls. 
We always have one version of these in our freezer. This is a new flavor and we love it! It’s perfect for Christmas. It’s also great for the gluten free and refined sugar free. For those who watch their caffeine intake, try carob. It tastes really similar to cocoa and it’s caffeine free. You can eat these without feeling guilty.
1 c. nuts or seeds (we like walnuts and sunflower seeds)
1 c. dates
2 T. cocoa or carob powder + extra for dusting

1 drop Peppermint essential oil (you can substitute peppermint extract or flavoring oil)

  1. In a food process or high speed blender (I love my Vitamix!), finely grind nuts/seeds.
  2. Add carob/cocoa powder and essential oil. Mix.
  3. Add dates. Blend together. You will need to use the tamper to help with this.
  4. Roll into little balls, dust with carob/cocoa powder, place on a plate and freeze for 30 minutes.
  5. Remove from freezer and move to container. Store in the freezer or refrigerator.
