Pumpkin Spice Latte

4 Servings 
Did you know Starbucks Pumpkin Spice Latte is filled with ingredients you can’t pronounce and doesn’t even have plain pumpkin in it? Here’s a real food, really yummy recipe from Danielle Walker. Leave the coffee out and you have a coffee creamer for the next week.
 
2 cups strongly-brewed coffee or espresso

3/4 cup unsweetened almond milk

3/4 cup full-fat coconut milk*

1/3 cup pure maple syrup*

3 tablespoons pumpkin puree (homemade or store-bought)

1 teaspoon pumpkin pie spice*

1/2 teaspoon pure vanilla extract*

    1. Combine all of the ingredients in a saucepan over medium-high heat. Simmer for 5 minutes, whisking occasionally, until heated through and slightly frothy on top.
    2. Carefully transfer the liquid to a blender and cover the top with a towel. Blend on high for 30 seconds until foamy. Alternatively, use an immersion blender in the pot. Divide among four mugs and serve.
