How to Make a S’more
(which, by the way, is very American)
1. Gather firewood, newspaper, matches. Make the fire (which, in windy IL, can be very difficult most of the time).
2. Find roasting stick, marshmallows, chocolate, graham crackers. (Don’t eat them yet.)
3. Roast marshmallow one of two ways – slowly until perfectly brown, gooey and very droopy OR quickly by letting it ignite in the flames.
4. Assemble graham crackers, chocolate and marshmallow into s’more.
5. Eat with a smile. Try not to get the gooey stuff all over your face, hands, clothes, friends.

 

OR Go the Easy Route
Make an extreme quick stop in at The Country Cupboard. Grab two containers of S’more Mix (one won’t be enough). Help yourself to a handful of chocolate chips, chocolate covered marshmallows, mini graham crackers, and yogurt covered graham crackers. Stick the rest in the cupboard. Pull out whenever you want s’mores. It’s WAY easier than the fire and perfect roasted marshmallow stress, plus it’s just as good.

Sweet Potato Taco Bowl

4 servings, 25 minutes
It’s almost time to dig the sweet potatoes in the garden. Add them to tacos and get a great combo. Mix in all the little extras and make a fantastic meal. 

 

  • 2 tbsp chili powder*
  • 1 tbsp paprika*
  • 1 tbsp cumin*
  • 2 tsp salt*
  • 1 tbsp dried oregano*
  • 1 tsp garlic powder*
  • 1 tsp onion powder*
  • 1/4-1/2 tsp cayenne pepper (optional)*
  • 1 lbs sweet potatoes, peeled and copped into 1-2″ cubes (approx.)
  • 1 tbsp olive oil*
  • 1 lbs  extra lean ground beef*
  • 1 14 oz can black beans, drained and rinsed*
  • 1 cup corn or 2 ears of corn (shucked and kernels removed from ear)*
  • 1 pint cherry tomatoes, halved OR 2 large tomatoes chopped
  • 1 avocado, sliced
  • Optional additional garnishes, sour cream, jalapeños, sliced green onion, chopped cilantro leaves, lime slices, crumbled feta, etc.

Preheat oven to 400° F.
In a small bowl mix together chili powder, paprika, cumin, salt, oregano, garlic power, onion powder, and cayenne pepper (if using).
Toss sweet potatoes pieces with vegetable oil and half the seasoning mixture from the small bowl, about 2 tablespoons. Bake for 15-20 minutes until tender and cooked through.
Meanwhile, cook beef over medium-high heat for about 5-7 minutes until cooked through. If necessary, drain any large quantities of fat from skillet, leaving about 1 tablespoon. Add beans and remaining seasoning mixture from the small bowl. Toss to fully coat beans and beef with seasoning. Continue to cook until beans are heated through.
To serve either place all ingredients in separate dishes for family style serving, or make individual bowls before serving table.
Serve with any desired optional garnishes.
