I made some Personal Sandwiches today in our deli with Lettuce and Tomato – our new option. They looked delicious! With homemade buns, your choice of yummy deli meat, pickles, sauces and now lettuce and tomato, they have to be scrumptious. I know they are. Why? Because I hear so many comments about our Personal Sandwiches. If you wish to comment, well, you know what to do!

 

Now is the time to try them. For the rest of September, you can get your own Personal Sandwich, a snack, cookie and bottle of water just for $5. That’s a tasty treat!

Bi-Weekly Deli Specials

This sale runs for two weeks – until September 26th.

BBQ Apple Butter Chicken

4-6 servings
Easy Version
1 14.5oz can chicken*
1 pint BBQ Apple Butter*
Drain chicken (save broth if you wish). Pour into crock pot. Heat on low for 6-8 hours.
*You may also mix together and microwave for a faster meal.
OR
For sauce:
·2 teaspoons olive oil*
·1 small yellow onion, small dice
·1 cup apple butter*
·1 cup ketchup
·1 tablespoon brown mustard
·1 tablespoon apple cider vinegar*
·1 teaspoon chili powder*
·1/2 teaspoon smoked paprika
·1/4 teaspoon cumin*
·1/4 teaspoon ground coriander*
·1/4 – 1/2 teaspoon chipotle chile powder
For slaw:
·1 large granny smith apple, cut into thin matchsticks
·1/4 cup minced cilantro
·1/2 lime, juiced
For chicken:
·2 large bone-in chicken breasts
· 1 teaspoons olive oil*
·salt and pepper*

For sauce:
Add a medium sized skillet over medium heat and add olive oil. When the oil is hot add the onions and sauté just until transparent and soft.
Add in remaining ingredients and lower heat to low. Simmer for about 10-15 minutes to let the flavors meld together.
Add salt and pepper if desired/needed.
Toss with shredded chicken or pork.
Note: If the sauce is not sweet enough you can always add a few tablespoons of dark brown sugar. This will depend on whether or not you like a sweet BBQ sauce.
For slaw: 
Mix ingredients together and serve on top of sandwiches.
For chicken:
Preheat oven to 400 degrees and line a rimmed baking sheet with a silpat liner or parchment paper.
Drizzle each breast with olive oil and season with kosher salt and pepper.
Roast for about 45 minutes until fully cooked.
Remove from the oven, let cool slightly and pull chicken from the breast.
To serve:
Serve over pasta, rice or mashed potatoes or make into sandwiches.
