Road Trip Rambles & Michigan Peach Scrambles

I just got back from “off-roading”. I can imagine the mental picture you have – me and the nieces and nephew on a rough ride. Well, we probably aren’t talking about the same thing, actually.

 

“Off-roading” could also be described as perusing the countryside for hours on state highways like Route 47. There are a lot of cute small towns from Fairbury to southeastern Indiana and a lot of curves and turns, too. I was surprised at the character of the small towns! But while they were cute, I’m still pretty partial to Fairbury and all the great things we have to offer. East or West home is best!

Summer is a busy time. It’s been busy here and I’ve neglected to share new items with you. We now carry several choices of gluten free pasta and also organic cacao goji bites (pictured here). These little bites taste amazingly like brownies but are made from nuts, seeds, dried fruit and cacao. They are my newest go-to snack.

 

This is getting rather long, but one more story, please. Sunday, July 30th is National Cheesecake Day. That is rather random and so is this phrase from awhile ago – “Let’s not and say we did”. A little while ago, I shared that phrase with my friend. We laughed over it. Then, she responded and said let’s turn it around and say “Let’s and say we didn’t, especially if it comes to cheesecake.” So in honor of National Cheesecake Day Sunday, “let’s have some cheesecake and say we didn’t”. Cucumber Ham Rollups

This is great sandwich substitute. If you are looking for a light, filling and nutritious lunch, here’s a good option.

 
1- 2 large cucumbers

1 lb. Virginia Brand Smoked Ham*
1 lb. Marble Cheese*
Bagel Cream Cheese Spread, Ranch Dressing or Hummus*

*Ingredients available at The Country Cupboard.

  1. Using a mandoline (or veggie peeler), slice the cucumber thin.
  2. Cut the meat and cheese into strips as wide as the cucumber strips.
  3. On each cucumber strip place 1-2 strips of cheese covering the length of the cucumber but leaving a 1/2″ at the end furthest from you.
  4. Place 1/2-1 tsp of the spread on top of the cheese.
  5. Next place 1-2 strips of ham on top.
  6. Starting at the edge of the cucumber closest to you (not the end that has the 1/2″ uncovered) start to slowly roll up the cucumber while pulling taut .
  7. Once the cucumber is all rolled up, secure with a toothpick.
  8. If not serving immediately place in a paper towel lined lidded container and store in the fridge.
