Have a Teeny Weeny Too Much Zucchini? (2017 Edition)

Here we are at Zucchini Season again or maybe it could be said That Annoying Green Thing Season. Even if you don’t like zucchini, check out the salad recipe below. Not only is it Zucchini Season, it’s also Cucumber time. We have what you need for pickling: dill weed, dill seed, pickling spice, pickling lime and turmeric. Or go the easy route with Mrs. Wages Mixes:  Dill, Sweet or Bread & Butter.

Apple and Zucchini Salad

20 minutes or overnight, Serves 8
Don’t hesitate over the raw zucchini. This salad is delicious, even picky eaters like it.
  • 1 pound zucchini, diced
  • 3 apples, diced
  • 1/2 green bell pepper, diced
  • 1/2 red onion, chopped
  • 1/3 cup vegetable or olive oil*
  • 2 tablespoons red wine vinegar
  • 1 teaspoon white sugar*
  • 1 teaspoon dried basil*
  • 3/4 teaspoon salt*
  • 1/4 teaspoon ground black pepper*

  1. Combine zucchini, apples, green bell pepper, and onion in a bowl.
  2. Whisk vegetable oil, vinegar, sugar, basil, salt, and black pepper together in a separate bowl; drizzle over zucchini-apple mixture. Toss to coat.
  3. May serve immediately or let set overnight to let the flavors mingle.
