Delicious Deli Savings

The Oven Roasted Chicken is my pick in the deli. With only five ingredients, there’s less preservatives, but still lots of taste in this deli meat. Stop in and ask for a sample!

No Bake Five Ingredient Blueberry Energy Balls

10 minutes 5 Servings
These are a little different than my normal bites of dates and nuts. They turned out a lovely blue color and taste delicious. They won’t travel well, but are a perfect in-between-meal snack. You might as well double the recipe so you have less dishes (and more snack) later.
  • 1/2cupfrozen blueberries(thawed)
  • 6 dates (pitted)*
  • 1/2 cup gluten-free oats*
  • 1/4 cup almond butter*
  • 1/4 cup chia seeds*
*Ingredients available at The Country Cupboard.
  1. Place all ingredients in a food processor and pulse until ingredients are combined and sticky. (A Vitamix works as well.)
  2. Using your hands, roll mixture into balls, about 1-2 tablespoons each. If it gets too sticky, dip your fingers in lukewarm water to help smooth the balls out.
  3. Place on a plate or in a container, cover and refrigerate for at least 1 hour. Serve and enjoy!

You can store in fridge for up to one week or in the freezer
