What Do Chocolate, Horseradish and Turkey Have in Common?

Here we are, switching months again (so soon). Did you know July is Horseradish Month? I didn’t either until a few minutes ago. But that’s pretty exciting considering we (finally) have Horseradish Sauce available for all of you who’ve asked.


In other random notes for the month of July, Friday the 7th is National Chocolate Day. I know some of you don’t like chocolate, but I make that up in my love for chocolate. Fruity Watermelon Pizza

15 minutes
  • Watermelon Slice
  • Chilled Canned Coconut Milk*
  • 1/4 t. Vanilla Extract*
  • Sweeter (Sugar or Honey)* – Optional
  • Fresh Fruit
  • Mint – Optional
*Ingredients available at The Country Cupboard.
  1. First, take your slice of watermelon & cut it into triangles. Then place them on a serving tray, in the original circle shape & set to the side.
  2. Next, open your can of chilled coconut milk & scoop out the solid section on top & place it in a bowl.
  3. Whip the chilled solid coconut milk with a blender until fluffy, then add vanilla extract & sweeter to taste. If the whipped coconut cream is too thick add 1/4 teaspoon of the remaining coconut milk & continue blending. Add more as needed.
  4. Top the watermelon pizza with the whipped coconut cream just as you would a pizza crust with sauce.
  5. Next, add all of your favorite fruit & mint.
  6. Serve & enjoy!
  7. Use the leftover coconut milk in popsicles, cereal, muffins, or smoothies.
