You’re Invited to a CookOut – Yours & Ours – Details Inside! 

Not only are we having a Cook Out (see details below), but we have all sorts of great additions for yours. First, we have Hamburger and Pork Patties. Season with one of our many choices. Then top those with Green Onion cheese or Smoked Cheddar (or one of our other 29 choices).


Our snack choices are endless – Ranch Veggies Chips, Sweet Potato Tortilla Chips or Gluten Free Pretzels.


Throw together a salad. You provide the greens, we have the rest:  Sesame Sticks, Pecans, Craisins, or Sunflower Seeds.


The sweet tooth is easy to remedy with Homemade Sugar Cookies or Oatmeal Raisin Cookies.

Indian Red Lentils

These are red lentils, they turn yellow when cooked. And if you haven’t tried Indian food before, give this a whirl. It’s easy and delicious!

3-4 Tbsp coconut oil*

  • 1 onion, diced (or 2 T. minced)*
  • 8 garlic cloves, minced
  • 28 oz (3½ cups) chicken broth
  • 28 oz can diced tomatoes
  • 2½ cups red, brown, or green lentils, rinsed*
  • 1 teaspoon turmeric*
  • 1 teaspoon ground cumin*
  • ½ teaspoon pepper*
  • ½ cup chopped fresh basil or  2-3 Tbsp dried basil*
  • Salt to taste ~ 2 t.*
*Ingredients available at The Country Cupboard.
  1. Melt oil in a large, heavy pot over medium heat.
  2. Add onion and garlic. Sauté 5 minutes or until the onion is soft.
  3. Add broth and next 5 ingredients.
  4. Bring to a boil. Reduce heat to low.
  5. Simmer, uncovered, stirring occasionally, approximately 30 minutes or until lentils are tender. (Red lentils will cook quicker than brown or green.)
  6. Stir in basil and salt to taste
