Did you ever read the book The Bernstein Bears and Too Much Birthday? I thought of that book this week. Although in our story, while it was A LOT of birthday, it wasn’t TOO MUCH. Banana Bread Granola
Doesn’t this sound delicious? A customer dropped off the recipe. You can sub chopped nuts for the oats and add raisins if desired.
- 3 c. rolled oats
- 1 c. banana chips, lightly crushed
- 1 c. salted peanuts
- 1/2 c. uncooked quinoa
- 1/4 c. light brown sugar
- 1 t. cinnamon
- 6 T. butter
- 1/3 c. natural peanut butter
- 1/4 c. honey
- 1/2 c. ripe banana, (1 med.) mashed
- 2 t. vanilla extract
*All Ingredients Available at The Country Cupboard except banana.
Preheat oven to 325°. Line two large rimmed baking sheets with parchment. Combine oats, banana chips, peanuts, quinoa, sugar, and cinnamon in a bowl.
Heat butter, peanut butter and honey in a small saucepan over medium-low heat. Stir until melted. Remove from heat. Add vanilla and banana. Mix with oat mixture.
Spread granola on baking sheets. Bake, stirring once, until golden brown – apprx 25-27 minutes.
Cool. Break into smaller pieces. Store in airtight container for up to 1 week.
