What’s So Exciting About Pop(corn), Chips, Cheese and Crackers? 

Did you ever read the book The Bernstein Bears and Too Much Birthday? I thought of that book this week. Although in our story, while it was A LOT of birthday, it wasn’t TOO MUCH. Thanks for joining the party. We had a blast playing hide ‘n seek, eating chocolate and giving out gift coupons. Now – just don’t forget to use your coupon.

 

Our next “big” event is coming up the weekend of May 5 and 6. Join us then for a “Tea Party“. No, not the frilly-dresses-just-for-grandmas-and-little-girls kind. Nope! This is for everyone who likes tea. From hot herbal, to iced, sweet and between, come drink it up. More details are coming.

Banana Bread Granola

Doesn’t this sound delicious? A customer dropped off the recipe. You can sub chopped nuts for the oats and add raisins if desired.
 
  • 3 c. rolled oats
  • 1 c. banana chips, lightly crushed
  • 1 c. salted peanuts
  • 1/2 c. uncooked quinoa
  • 1/4 c. light brown sugar
  • 1 t. cinnamon
  • 6 T. butter
  • 1/3 c. natural peanut butter
  • 1/4 c. honey
  • 1/2 c. ripe banana, (1 med.) mashed
  • 2 t. vanilla extract
*All Ingredients Available at The Country Cupboard except banana.
 
Preheat oven to 325°. Line two large rimmed baking sheets with parchment. Combine oats, banana chips, peanuts, quinoa, sugar, and cinnamon in a bowl.
Heat butter, peanut butter and honey in a small saucepan over medium-low heat. Stir until melted. Remove from heat. Add vanilla and banana. Mix with oat mixture.
Spread granola on baking sheets. Bake, stirring once, until golden brown – apprx 25-27 minutes.
Cool. Break into smaller pieces. Store in airtight container for up to 1 week.
