Quinoa Porridge with Mixed Berries

Serves 4  |  25 minutes
I love quinoa! It’s a complete protein and holds me longer than oatmeal.
1 cup quinoa, rinsed and drained*
1 cup water
1¾ cup dairy or non-dairy milk*
1 teaspoon vanilla extract*
pinch of salt*
1 cup strawberries, sliced
1 cup blueberries
½ cup pumpkin seeds*
¼ cup sweetened cacao nibs or chocolate chips*

maple syrup or other sweetener of your choice*extra milk if desired

*Ingredients available at The Country Cupboard

  1. Place the quinoa, water, and 1 cup milk in a medium sized pot and bring to a boil. Reduce heat and cover, cooking on low for about 20 minutes, or until the quinoa is light and fluffy.
  2. Stir in the vanilla extract, pinch of salt, and ¾ cup milk.
  3. Spoon into bowls and top with berries, pumpkin seeds, and cacao nibs or chocolate chips. Drizzle maple syrup on top. Add more milk if desired.
