Chicken Dumpling Soup
I love this soup. It’s easy to make and serves a lot of people. Freeze the leftovers. Canned chicken makes it easier, too. Find it at The Country Cupboard!
12 green onions, chopped
½ c. butter*
½ c. flour*
10 c. water
1 pkg. (10 oz.) frozen peas and carrots
4 c. chunk chicken, drained*
1/3 c. chicken bouillon granules*
½ tsp. pepper, divided*
2 Tbsp. dried parsley*
5 c. buttermilk biscuit mix*
1 1/3 c. milk

Saute onions in butter, stir in flour until blended. Add water and veggies, 2 cups chicken, bouillon and ¼ tsp. pepper; bring to boil. Combine buttermilk biscuit mix, parsley and pepper. Stir in milk until moist. Fold in remaining chicken. Drop by tablespoonfuls into simmering soup. Cover and simmer for 15 minutes or until dumpling is baked. (do not lift lid while simmering). Serves 20.
