Most of the time the talk is not referring to “salad”, but to this or that with the current prices. Here at The Country Cupboard, we don’t talk “corn and beans”, but we do talk “almonds and apricots”. Stop by sometime. Brownie Batter Protein Pudding

Serving Size: 1 bar   Time: 5 minutes

Healthy enough for breakfast! Adding protein powder not only gives you protein, but other added nutrition.

1/2 cup unsweetened almond milk*
3 Tbsp unsweetened cocoa powder
1 medium-size ripe banana, frozen**
handful of spinach (optional; good for some extra greens)**

  1. Place all the ingredients into any standard blender in the order listed and blend until smooth and creamy. This pudding can be made in advance and stored in the fridge for extra thickness and creaminess. The longer it sits, the thicker it gets!
Notes
* To make smoothie nut free and allergen-free, use a rice milk instead of the almond milk.
** If you’re not keen on bananas, you can replace it with 1/4 – 1/2 of a ripe avocado.
*** If you end up adding the spinach, you may need to add a little extra milk too. Start without it and then adjust to your preferences.
