Immunity-Boosting Breakfast Bars

GF, DF, EF, SF, & NF option

With colds and flu going around, our thoughts on health and with the upcoming Allergy Free Saturday, this recipe is a great fit.

Makes 16

1 can (15 ounces) chickpeas, drained & rinsed
1/2 cup dates (soaked in water for 20 minutes)
1/2 cup whole almonds (substitute sunflower seeds if you can’t do nuts)
1 cup rolled oats (gluten-free if needed)
1/2 cup pumpkin puree
1/4 cup maple syrup
2 tablespoons coconut oil
1/2 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons vanilla

1 1/2 teaspoons cinnamon

optional add-ins:  dark chocolate chips, raisins, chopped walnuts
1/4 cup rolled oats
1/4 cup pumpkin seeds (pepitas)

Put all ingredients in a food processor and process until very well combined.  Scrape the sides of the machine down a few times and let the machine run until the mixture is quite smooth.  Add any add-ins you prefer.

Transfer the mixture to the prepared pan and add the toppings.  Bake in the preheated oven for 15 minutes. Serve warm or cold.  Best if eaten within 2-3 days.  Store in the refrigerator.
