Date Pudding

This is my favorite Thanksgiving food ever! I can’t hear your reaction, but I can guess what it is – “date pudding? yuck!” I’ve heard it over and over again. I grew up where pudding was a side dish. Yes, a side dish! So this was just part of the Thanksgiving meal, but it’s basically dessert. You make a date cake and then mix it with whipped cream. What’s not to love about little sweet bites of dates mixed with cake and whipped cream? Try it! I’d love to hear your thoughts!

All ingredients available at The Country Cupboard except whipping cream.

1 c. sugar
1 c. flour
2 tsp. baking powder
½ c. milk
½ c. nuts, chopped (walnuts or pecans are best)
1 c. dates, chopped into small pieces
1 c. brown sugar
1 Tbsp. butter
2 c. boiling water
1 ½ pints of whipping cream, whipped

Combine first 6 ingredients, mix well and put in greased 9 x 13. Combine remaining ingredients and pour over batter in pan. Bake at 350° for 25 minutes. Cool completely. Cut into 1 inch squares or crumble into serving bowl. Gently stir in whipped cream until mixed. Serves 8-10.
You can make the cake ahead of time and freeze.
