Day after day I watch people come to The Country Cupboard to buy their special gummies, snack mixes, pretzels and nuts for their trips. Now it’s my turn to go. But my pile of quick oats, raisins, honey, flax meal and coconut might not look like treats to you. My nephew and nieces have requested “energy bites”. That means anything rolled in a ball. So now I have to make it, not just buy a bag of this or a bag of that. It’s easy to make your own “energy bites”, though. I’m including a recipe to create your own that you’ll love. Not only will they be tasty, our dried fruit is on sale this week, so they will be economical too. Buy any bag of dried fruit, get 50% off a second bag. Mix and match between apples, apricots, bananas, cherries, craisins, dates, figs, ginger, goji berries, papaya, pineapple, prunes, raisins, strawberries or our fruit mixes. The sign-up for Michigan berries is still available. Pick up will be around July 10th. The cost will be approximately $2.50 a pound. All berries come in 10 pound boxes. Reserve yours by signing up via email, phone or stop in.
We’re glad you enjoyed the first shipment of Fresh Georgia Freestone peaches. Most likely we’ll be able to get some more in this summer if there is interest. These peaches are good for either canning or eating. Cost is $18.50 for a 10 lb box, $37.50 for 25 lbs (1/2 bushel). If you’d like some peaches this summer, please let us know. If we get a good response, we’ll let you know when they will arrive.
This recipe makes about 20 balls. Most ingredients available at The Country Cupboard.
2 – 2 ½ cups core ingredients
½ cup nuts or nut butter (the glue)
½ cup dried fruit (or chocolate chips)
1/3 cup sweetener
½ – 1 tsp flavor enhancer
1 – 2 tbs health booster
Mix all the ingredients together in a bowl until thoroughly combined. Allow mixture to cool in the refrigerator for 15 – 30 minutes. Once chilled, roll into energy balls!
