Lemon Honey Coconut Oil Dressing – most ingredients available at The Country Cupboard – I had this yummy dressing on my salad recently. It’s really refreshing and easy to make.
1 lemon, juiced
¼ cup Coconut Oil, melted
1 tablespoon fresh parsley, chopped
1 clove garlic, minced
1 tablespoon Wildflower or Local Honey
Salt, to taste
Ground Black Pepper, to taste
Onion Powder, to taste
Whisk all ingredients together, serve immediately. Dressing will thicken upon standing. TIP: If dressing begins to thicken, microwave on defrost for 30 seconds or set container in a pan of warm water.
