Little Scoops of News

New for this week: everything sesame sticks, swiss ‘n rye cheese, black bean and corn salsa, and smoked pickled eggs. The picnic table is ready and waiting for a luncheon. Stop by some summer day, enjoy the weather and a scrumptious “Your Personal Sandwich”. I recently tried Cajun ham and smoked provolone on an Italian Parmesan bun. It was phenomenal!

Kale and Feta Salad – serves 8

I ran across this recipe earlier this year. I think it’s delicious and my family agrees! It’s very important to massage the kale so it wilts and becomes tender. I use the dried fruit and nuts interchangeably with what I have on hand. This is also delicious with other fruit vinegars.

1 bunch kale, large stems discarded, leaves finely chopped
1/2 teaspoon salt
1 tablespoon apple cider vinegar
1 apple, diced
1/3 cup feta cheese
1/4 cup crasins
1/4 cup pecans

Massage kale with salt in a large mixing bowl for 2 minutes. Pour vinegar over the kale and toss to coat. Fold fruit, feta cheese, and pine nuts into the kale.
