Corned Beef & Cabbage
I fully intended to give you a great recipe for St. Patrick’s Day this week with corned beef and cabbage. But after my research, I realized true Irish do not eat corned beef on St. Patrick’s day. They prefer thick cut salted bacon. It’s the American Irish who eat corned beef. So in efforts to share authentic recipes, I decide you might enjoy some Irish Soda Bread to go along with your American Irish Corned Beef and Cabbage. You’ll have to find your recipe for corned beef elsewhere, but you can find your Corned Beef at The Country Cupboard.
4 c. whole wheat flour
1 c. bread flour
1/3 c. rolled oats
1 tsp. baking soda
1 tsp. salt
2 ½ c. buttermilk
45 minutes. Yields 4 loaves, 8 slices each.
