Corned Beef & Cabbage   

I fully intended to give you a great recipe for St. Patrick’s Day this week with corned beef and cabbage. But after my research, I realized true Irish do not eat corned beef on St. Patrick’s day. They prefer thick cut salted bacon. It’s the American Irish who eat corned beef. So in efforts to share authentic recipes, I decide you might enjoy some Irish Soda Bread to go along with your American Irish Corned Beef and Cabbage. You’ll have to find your recipe for corned beef elsewhere, but you can find your Corned Beef at The Country Cupboard

Irish Recipe #2 – Irish Soda Bread   Every place we stayed in Ireland offered us this bread. I would highly recommend trying it. It’s easy to make and it’s a great way to bring a little bit of Ireland into your home. Share your extra loaves with your friends and neighbors. 

4 c. whole wheat flour
1 c. bread flour
1/3 c. rolled oats
1 tsp. baking soda
1 tsp. salt
2 ½ c. buttermilk

Lightly grease 2 baking sheets. In a large bowl, stir together flours, rolled oats, baking soda and salt. Gently mix in the buttermilk until a soft dough is formed. Knead very lightly. Divide dough into 4 pieces; form into circular flat loaves. Cut an X in each loaf  and place on prepared baking sheets. Bake at 425° until golden brown, about 30-
45 minutes. Yields 4 loaves, 8 slices each.
