Red, White and Blue

Yes, you read that right and no, it’s not Memorial Day yet. The white weather has us feeling a little blue, so we are thinking about Valentine’s Day and red cookies.

The dough doesn’t have to be refrigerated, so they are easy to make. Obviously, they taste great warm, but freeze well, too. Just change the cookie-cutter shape and the sprinkles and use them for any holiday. We like them for Valentine’s Day, July 4th, Fall/Thanksgiving and Christmas. Of course, at The Country Cupboard, we have sprinkles and colored sugar for all occasions. New in this week is yellow, orange, blue and green colored sugar, along with St. Patrick’s day sprinkles. We also now have fajita seasoning, coconut milk, organic coconut oil, cashew butter and soy milk powder.

Our Favorite Sugar Cookies

1 c. butter (no substitutes), softened
1 c. sugar
1 tsp. vanilla
1 egg
2 tsp. baking powder
3 c. flour
Preheat oven to 400°. Cream butter and sugar, then beat in egg and vanilla. Mix baking powder and flour together; add one cup at a time to other ingredients. Dough will be very stiff. Do not chill. Divide dough into 2 balls. Roll 1/8 inch thick and cut out with bee themed cookie cutter. Bake on ungreased cookie sheet for 6-7 minutes. Do not overbake. Makes 20-24 cookies.

Our Favorite Sugar Cookie Frosting

1/3 c. butter, softened
1 lb. powdered sugar
¼ tsp. salt
¼ c. milk
1 tsp. vanilla
Cream butter, add powdered sugar and then remaining ingredients. Beat until smooth and creamy. If too stiff, add a few drops of  milk. Makes enough for 2 recipes of sugar cookies.
